I got some good video of Laurel laughing today.
You may notice the faintest beeping noise in the background of this clip. That was my kitchen timer telling me that my refrigerator pie (aka quiche) crust was ready. I’ll share this recipe with you, it is one of our new favorites.
Refrigerator Pie
Prebake a store bought pie crust for 10 minutes at 400 degrees.
Mix 2 eggs, 1/2 cup milk, 1/2 cup buttermilk, 1 cup prepared veggies (I’ve done it with sautéed onions, garlic, and mushrooms and another time with blanched asparagus), and 1/2 cup of shredded cheese and pour into the pie crust.
Bake for 45 minutes at 350 and let cool for 15 minutes before serving.
Here’s a little tip for the daring…use your oven timer so that you aren’t stuck in your house during those baking minutes. I had the whole thing prepped and in the oven when we left for the Y this afternoon. The oven turned itself off after baking and the refrigerator pie was perfectly warm & yummy when we got home 90 minutes later. All I had to do then was throw together a salad & dinner was served!
That oven idea is great unless you live with Mr. Safety. If you think for one minute that Jim would leave the house (or let me do the same) with the oven on, you are sadly mistaken. I am doomed to a life of waiting (impatiently most of the time) for food to cook instead of dashing off to the gym and having it ready when I get home like the rest of the modern world. *sigh*
